APPELLATION: Barolo (DOCG).
VINEYARD: Araldica. Its grounds are the largest in the region of Piedmont, Italy, with an area of 900 hectares distributed in areas of Monferrato, Langhe and Roero, declared by UNESCO as a winegrowing regions world heritage. It has an altitude between 250 and 400 meters above sea level and its soil is clay over limestone.
GRAPES: Nebiollo (100%).
AGEING: 24 months in Slavonian oak barrels of 50 HL. After packaging is aged another 12 months in the bottle.
PREPARATION: The harvest is manual and the grapes are harvested in small baskets to avoid damage. The fermentation is yeast and rotary tanks are used at temperatures between 25 and 30 °C for a balanced flavor and color extraction, given the tannic intensity Nebiollo grape. Finally the wine was decanted into stainless steel containers and subjected to malolactic fermentation.
