Ca' del Baio Barbaresco Asili 2016 (Nebbiolo)
- View: bright garnet red, light orange hues.
- Nose: intense, fruity aromas of marasca cherries and hints of violets, spicy notes of black pepper, licorice and goudron.
- Mouth: dry, warm and soft, a long, rich, smooth flavor.
VINEYARD: located in Treiso. Exposure: southwest. Marga bluish argillaceous limestone.
AGEING: Aged for 24 months, partly in oak barrels and partly in small French Barrilles before continuing their aging for 6 months.
PREPARATION: destemmed and pressed grapes, fermented in their skins in stainless steel tanks for 5 to 30 days with temperature control.
PAIRING: Red meats cooked and stewed, game meats and ripe cheeses.
TEMPERATURE: 18-20 °C
ALCOHOL CONTENT: 15%
