Description of L'Etoile Banyuls Grand Cru 2010
L'Etoile Banyuls Grand Cru 2010 (Carignan and Grenache)
TASTING NOTES:
- View: copper.
- Nose: delicately spicy.
- Mouth: aromas of crystallized fruits and honey.
APPELLATION: Banyuls Grand Cru.
VINEYARD: detrital soil, shale primary era (Cambrian) and granita micaschista.
GRAPES: Grenache Carignan 85% and 15%.
AGEING: aged in old oak vats for at the least 30 months.
PREPARATION: a tank is filled exclusively with Grenache Noir, a second tank receives the other grape varieties. Grapes de-stemmed and crushed. Fortification of the grapes followed by a maceration of 3 weeks with the alcohol. Hydraulic presses made by pressing traditional vertical. Mix 2 tanks after the first winter.
WINE PAIRING: Cheeses and desserts.
