Elaboration of Txakoli Astobiza 2018
Txakoli Astobiza 2018 (Ondarrabi Zuri and Ondarrabi Zuri Zerratia)
- View: Straw yellow with greenish reflections.
- Nose: Fresh aroma, with intense notes of white fruits such as pear and apple, citrus, like grapefruit and bone, like peach.
- Mouth: light flavor, good texture and light bitter and mineral notes.
APPELLATION: Arabako Txakolina (Basque Country, Spain).
VINEYARD: Señorio de Astobiza.
GRAPES: Gros Manseng, Petit Corbu Ondarrabi and Zuri.
AGEING: Madura on lees in stainless steel tanks.
PREPARATION: The grapes are harvested manually, and then be crushed and gently pressed directly with whole bunches. They pass through a maceration for 12 hours and fermentation in stainless steel tanks.
PAIRING: Sushi, sashimi, fried seafood and fine cheeses.
RECOMMENDED SERVING TEMPERATURE: 7-10 °C
