TASTING NOTES OF Txakoli Astobiza 2016: Txakoli Astobiza 2016
- View: Straw yellow, green tones.
- Nose: intense varietal aromas, notes aniseed, fennel, mineral and citrus skins.
- Mouth: Very citrus mouth, a perfect acidity. Long and floral, a slight memory of banana yogurt.
GRAPES: 90% Hondarrabi zuri, 10% Hondarrabi zuri zerratie.
PREPARATION: stemming and cold maceration prior to soft pressing, static settling of the must, controlled fermentation of 17 to 18 °C in stainless steel 5,000 and 10,000 liters temperature. inerted, stabilized and microfiltration process.

We paired it with meat but I would have prefered to pair it with another dish.

Astobiza Txakoli 2016
I was surprised it was a white with such an intense colour. Fresh lemon and apple aromas. Salty touch, like the sea, cool.
