In Andalusia there are four major denominations of origin. All of them produce generous wines, by the methods of oxidative aging and the so-called “aging under veil.” These are dry and sweet wines, which, with all their intermediate styles, have represented Spanish wines, especially that of Jerez.
The wines of Andalusia, especially the great wines of Jerez and Montilla-Moriles, are becoming well-known and respected in the pudding section of menus in the best restaurants. Andalusia is the main producer of such wines, both because of tradition and because of the characteristics of its climate and soil, but today, many of these denominations of origin are producing new wines, especially young white wines that are fresh and pleasant.
The new wines of Andalusia are obtained from mixing Spanish varieties with European foreign varieties. These are being developed in the areas of Arcos de la Frontera, Ronda, Baza and the Alpujarras of Granada and Almeria.
