PREPARATION: The grapes handpicked by producers are downloaded, de-stemmed and crushed immediately. Adding yeast of choice begins fermentation at controlled temperatures (28 ° C). Maceration, or joint fermentation of grapes and skins, occurs during this period via a cyclic pumping up the must at the bottom of the tubs in order to obtain a higher extraction of colors and tannins (responsible body wine ).
