TASTING NOTES:

APPELLATION: Alentejo

VINEYARD: The man behind Torero Wines is André Herrera Almeida, who has worked almost exclusively in the Alentejo region, especially in the Cinta Negra of António Maçanita. His wines are unrepeatable and conceptual. According to André, the wines of the Old and New World are made with Alentejo grapes, but using different techniques developed in Australia, where he spent two seasons. Barrel time and battonage are always maximized, near or even beyond the limit. André wanted white, red, and even rosé wines to be subjected to this radical winemaking and then almost obsessively followed its evolution in the bottle for a decade.

GRAPES: Rabo de Ovelha

AGEING: It is aged for sixteen months.

PREPARATION: The Rabo de Ovelha grapes, once harvested, pass from the sorting table to the next stage of the process - the press, without destalking. The fermentation procedure takes place in new French oak barrels, in this case, the battonage technic is used. The product is aged for one year on fine lees and after that in the bottle for a period of six years.

PAIRING: B de Duende Grande Reserva Branco 2010 pairs beautifully with fish dishes and appetizers.
