In 2001, Pernod launched a new aniseed spirit: Absinthe Pernod , with extracts of absinthe plants. Inspired by the original recipe that made the Maison Pernod famous in the 19th century, this absinthe with a strong taste of aniseed and without sugar, with an alcohol content of 68%, has a thujone content that complies with current legislation.

To release all the fresh and intense liquorice and aniseed aromas, it is recommended to dilute Absinthe Pernod with a little bit of water when serving. It can also be used as an ingredient for the creation of many fancy cocktails.

Près d'un siècle après son interdiction à la vente, la boisson fabriquée à base de plantes de grande absinthe renaît au plus proche de la recette historique. Pour retrouver sa signature d'origine, Pernod Absinthe est produite aujourd'hui dans les alambics en cuivre de la distillerie de Thuir, selon le procédé traditionnel qui la vit naitre à Pontarlier en 1805. Inspirée de la recette d'un manuscrit du 19ème, Pernod Absinthe est produite de manière traditionnelle: la grande absinthe de Pontarlier et l'anis vert sont distillés après macération dans l'alcool de vin. Le cœur du distillat de grande qualité est ensuite macéré à nouveau en présence d'un bouquet aromatique riche notamment de badiane, mélisse, petite absinthe et d'hysope.
